Jean Paul Bondeaux


Jean Paul Bondoux comes from Luzy, in La Bourgogne area, in the region of Morvan, one of the most important Celtic settlements in France.
He was born on November 7, under the sign of Scorpio. At 16 he travelled to Paris, searching for challenges and opportunities. He worked with a traiteur and shortly after began to work at the Gare de l’Est Restaurant.

He began his career in the kitchen of the Hôtel Napoleón, where he mastered brasserie techniques. Towards the end of 1979 he travelled to South America and he settled down in Punta del Este to work at El Palmar Restaurant. The following year he created La Bourgogne Restaurant at the Salto Grande Hotel. In 1993 he decided to cross La Plata River and he inaugurated La Bourgogne Restaurant at Alvear Palace Hotel in Buenos Aires, where it still remains. In 1999 he went into partnership with the hotel to expand and to offer new gastronomic proposals for the Restaurant and Catering service, becoming a predecessor in providing his clients with an innovative luxury service in their own homes.

He is a member of the French Cuisine Academy, and Argentinean judge in the Bocuse d’Or, the world’s most prestigious cuisine contest.

He was awarded the Order of Merit by the Ministry of Agriculture of his home country, France, for spreading and promoting the French cuisine in South America.

In 2005 he opened a consulting branch of La Bourgogne Restaurant in Mendoza, at Vistalba Winery.

He has achieved all this with a remarkable personal stamp, a constant perseverance and upholding his motto: hard work and dedication will lead to excellence.

Lucas Díaz


Lucas Martín Díaz tiene 34 años y nació en Trelew. Se formó junto al francés Jean Paul Bondoux, quien lo considera uno de sus mejores discípulos, por lo que le confió la responsabilidad de manejar el reconocido restaurant del hotel cinco estrellas Hotel Diplomatic.

Anteriormente también fue el jefe de cocina de otro cinco estrellas: el Hotel Casino Iguazú. También fue el Chef Ejecutivo del Traiteur de La Bourgogne en Buenos Aires y en Punta del Este (Uruguay). Cada temporada se encarga de las fiestas de fin de año del Catering Cuisine Du Sud , que nuclea a La Bourgogne de Buenos Aires y el Café Des Arts en el Museo Malba.
